Ingredients
To make a spinach omelette for two people, you will need the following ingredients:
- 4 eggs : Source of high quality proteins, also provide fatty acids and essential vitamins.
- 200 g of fresh spinach : You can also use frozen spinach if you don’t find costs.

If you opt for frozen spinach, make sure you do not recommend them well and drain them to prevent the fritta from getting too wet.
Step 2: Prepare the omelette
In a bowl, break the eggs and beat with a fork or a whisk. Add a pinch of salt and pepper according to your tastes.
For an additional touch, you can finely cut a onion and add it to the egg mixture.
This will bring a caramelized sweetness that goes perfectly with spinach.
Step 3: Cook the omelette
In the same pan where you cooked the spinach, add a little more olive oil if necessary and pour the beaten egg mixture.
Divide the spinach cooked uniformly above.

Sprinkle on half of the omelette.
Fold the other half and cook for another minute so that the cheese melts.
